Waterproof canvas cut with a split skirt, so the lower half opens rather than wrapping the legs together. That split is a working detail: it lets you stride, crouch and climb a step without the apron pulling tight across the knees.

Canvas gives the durability, the waterproof finish gives the protection. Between them they cover the two things that ruin an apron in a busy kitchen: fabric that soaks through, and seams that give out after a few months of daily wear. Canvas this weight softens slightly with washing but keeps its shape, so the apron does not stiffen into a board the way cheaper cotton blends can after repeated hot washes.

Pockets are set where they can actually be reached with hands full. Six colours: black, grey and dark green are the standard professional choices; blue and light brown are warmer; red is the outlier and useful for distinguishing roles across a team. One size with adjustable ties. The bib sits a little higher than most, which stops it slipping down over the chest during a long service, and the shoulder straps cross at the back rather than looping straight, spreading the weight more evenly. Machine wash on a normal cycle and it will not need ironing.
